Ingredients:
500 grams of Santorini Fava
4 tablespoons of olive oil
2 onions, finely chopped
Salt
For garnish:
Olive oil
Juice of 1 lemon
1 chopped onion
A little parsley or oregano
Instructions
We rinse the fava beans well, at least 2-3 times, with clean water.
We place the fava beans in a saucepan with five cups of water. We then turn on the heat and wait for the fava to boil for about 20-30 minutes. While it is boiling, we stir regularly so that the water does not foam and swell.
Once the boiling is complete, we lower the heat and with a slotted spoon, we skim the fava beans and we add the salt, the onions and the olive oil.
We let the fava boil for about 60-90 minutes, until it thickens and takes a form of porridge.
When finished, we put the fava beans in the multi to achieve the perfect texture and our fava becomes a smooth puree.
We serve our fava with raw olive oil, lemon and chopped onion.
If we like, we can add a little parsley or a little oregano on top.
