Potato salad with tuna

Ingredients:

2 kilos of Naxos potatoes
2 cans of smoked tuna
Juice of 2 lemons
Grate of the skin of half a lemon
4 tablespoons of vinegar
1 cup of capers
1 large onion
1 tablespoon of honey
1/2 bunch of chopped dill
1 low-fat yogurt (2%)
1 teaspoon of coriander powder
2 tablespoons of extra virgin olive oil
Salt
Freshly grounded pepper (mixture of white, green, red)

An easy and extremely delicious potato salad for which, the choice of the famous Naxos potato automatically makes it unique!

This recipe is ideal for those who follow a balanced diet but also for those who love Mediterranean flavors. Tuna Potato Salad is rich in nutrients, very low in calories and has an unsurpassed taste.

After washing our potatoes well, we boil them with coarse salt in a saucepan for 30 to 40 minutes. We Cool them in cold water. We peel them and cut them by hand in irregularly large pieces. We do not boil them peeled, because that way they absorb a lot of water and lose their intense nice taste.

We add salt and pepper and our onion, after we have cut it into small pieces, and we leave them to prepare the sauce with the tuna.

In a clean bowl, we pour the yogurt, the tuna, the olive oil, the chopped dill, the caper – after we have washed it several times to remove the salt, the lemon juice, the grate of the skin of the lemon, and the 4 spoons of vinegar that we have already mixed  with the honey. We then add the coriander and stir.

In a bowl, we mix our potatoes with the sauce and grate a little pepper, white, green and red beans. We decorate with one sprig of dill and a little caper.

We do not serve it immediately, because the longer we leave it in the fridge, the tastier it becomes.
